Chocolate Mole

Mole is traditionally used in Mexican cuisine.  It takes a lot of time, labor and passion, but it’s layered with fun and mysterious flavors.  It is wonderful over braised slow-cooked shredded chicken, or alongside a beautiful filet mignon. Chocolate Mole adds a warm sultry flavor. 

Make sure you have plenty of time to prepare this awesome sauce.  Your home will become wrapped in an intoxicating aroma that will captivate all!  

I highly suggest wearing gloves while handling peppers, otherwise, your hands will burn and tingle all night!!

Chocolate Mole Ingredients

To make your own delicious Chocolate Mole, you will need:

  • 6 lbs dried Pastilla chilies, chopped with stems and seeds removed
  • 10 cups combination beef and chicken broth
  • 3 Anaheim chilies, chopped (wear gloves when chopping)
  • 2 Poblano chilies, chopped (hot, hot, hot…. wear gloves)
  • 2 Onions chopped
  • 4 tbsp chopped garlic
  • ¼ cup raisins
  • 2 tbsp butter
  • 4 cinnamon sticks
  • 2 tbsp whole cloves
  • ½ tsp cumin
  • 1/4 cup fresh lime juice
  • 6 oz. sweet chocolate grated salt and pepper to taste

Step By Step Instructions To Make The Chocolate Mole

Follow these step by step instructions to cook the Chocolate Mole just right:

Step 1: Cooking The Pastilla chilies

To begin, simmer the Pastilla chilies in the beef and chicken broth for 30 minutes. After cooking, puree the mixture and set it aside.

Step 2: The Second Mixture

Sauté the raisins, Anaheim chilies, Poblano chilies, onions and garlic in butter until it softens. This will take about 5 minutes.

Next, add the remaining stock, cinnamon, cloves, cumin, and lime. 

After combining the ingredients, bring to a boil them to a boil.

Step 3: Putting It All Together

To this second mixture, add the puree of Pastille Chilies you made earlier. Continue boiling until it is reduced to about 5 cups. This will take approximately 1 1/2 hours.

Finally, strain the sauce through a fine-mesh strainer. Stir in chocolate and season with salt and pepper.

That’s it! This traditional and delicious Mexican sauce can be used as a great compliment to any chicken or steak platter that you prepare. Enjoy!
