Churro Ice Cream Sandwiches Recipe

It’s safe to say that this perfect dessert is the closet thing to heaven on earth that I have experienced.  You will surely fall in love with this outrageously amazing delight!!

This specialty churro ice cream sandwiches can be made with either pineapple-coconut or mint chocolate chip ice cream to satisfy any ice cream lover!

(Makes 2 Ice Cream Churro Sandwiches)

Churro Ice Cream Sandwich Ingredients

To make your own churro ice cream sandwiches you will need:

  • 16 Inch piping bag fitted and a rounded star tip no larger than ½ inch, this all comes in a kit which I recommend you assemble before food prep

( 1 used Ateco tip #829)

  • Candy or heat resistant thermometer
  • Paper Towels
  • Large stainless steel strainer spoon
  • Kitchen tweezers

Ingredients For The Churro Coating

  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon

Mix sugar and cinnamon in a bowl and set aside

Ingredients To Compliment The Pineapple Coconut Ice Cream

  • Fresh pineapple/ sliced in a wheel and ¼ cup small diced pieces
  • Fresh ginger zest / 6 small thin slices
  • 1/2 cup fresh blueberries/ and raspberries or any fresh fruit in season
  • 1 pint of pineapple coconut ice cream
  • 1 pint of mint chocolate chip ice cream

Ingredients To Prepare The Dough

(4 Servings/ 4 Inches Long)

  • 1 Cup water
  • 2 ½ tablespoons white sugar
  • 1/2 teaspoon fine pink Himalayan Sea salt
  • 2 tablespoons vegetable oil
  • 1 cup all-purpose flour
  • Deep frying skillet or deep-fryer
  • 2 quarts vegetable or canola oil

Step By Step Instructions To Make Churro Ice Cream Sandwiches

Follow these step by step instructions to make this delicious dessert:

Step 1: Preparing The Dough

In a small saucepan combine water, sugar, salt and vegetable oil. Bring to a boil and then remove from heat. Stir in flour and form a ball. It is very simple and happens quickly, approx. thirty seconds.

Note that it’s a little hot so if you use a disposable bag let it cool down a bit. 

Step 2: Frying

Heat oil to 375 degrees. Verify with your thermometer.

With a pastry bag, pipe strips of dough into 4 coils (2 create 2 ice cream sandwiches) about the size of a sand dollar on a wax sheet. One at a time, place these dough coils on a large stainless steel strainer or perforated spoon. Place the dough in the hot oil and fry until golden. This takes about 20 -30 seconds. Next, drain and place on paper towels to pat dry.

Step 3: Finishing The Churros

After they have dried, roll the coils in the mixture of sugar and cinnamon for a light coating.

Place a spoonful of coconut-pineapple ice cream in between two churro coils to create an ice cream sandwich. Grate and add fresh ginger zest on top and place small bits of fresh ginger with kitchen tweezers on top of the churro/ plate medley of fresh fruit on the side.

For the second churro sandwich, place one scoop of mint chocolate chip ice cream.

I placed the coconut-pineapple ice cream churros artfully over a freshly sliced pineapple wheel and finished it off by grating fresh ginger zest on top adding a delicate zest!!!  To say this was delicious is an understatement. I am still dreaming about my first glorious bite into this crispy, yet doughy refreshing ice cream pastry. The ginger adds an amazing aromatic flavor with the pineapple and coconut, leaving your palate in a state of heaven.     Enjoy…and use your favorite ice cream flavor to make your perfect Churro Ice Cream Sandwich.
