Endive Tips with Blue Cheese, Prosciutto and Citrus

This is a beautiful summer appetizer. Not only is it visually gorgeous but the combination of flavors are unforgettable. This delectable bite-size starter has an elegant presentation with a slightly bitter, creamy, salty and citrus layering of tastes that is simple to prepare, bursting with flavor, and very impressive to your guests.

Endive Tips with Blue Cheese, Prosciutto and Citrus

To make these delicious Endive Tips with Blue Cheese, Prosciutto, and Citrus, you will need:

(Serves 15)

  • 3 Endive Tips
  • 1 head of Radicchio
  • Wedge of Crumbly Blue Cheese. (I prefer Gorgonzola which is a firmer Italian Blue Cheese)
  • 1 Pink or Ruby Red Grapefruit, slice 15 square shapes, approx. ½ inch
  • 1 pack of thinly sliced Prosciutto (my favorite can be purchased at Trader Joe’s or get more bang for your buck at Costco)

Step By Step Instructions

Follow these step by step instructions to create the perfect Endive Tips!

Step 1: Preparing The Endive Tips

Remove five (5) of the outer layer leaves of each endive tip, giving you 15 large similar-sized tips.

With the 15 tips, strategically place them on a plate (picture below) so they look like flower petals.

Step 2: Adding The Toppings

Next, slice the bottom half of radicchio head and place it in the middle of the endives. This will give the overall platter the appearance of a flower.

With the Prosciutto, roll it into thin rolls and cut them into half-inch pieces. Place the Prosciutto inside endive cup.

Place ½ to ¾ tsp of blue cheese crumbles on the endive outside of the Prosciutto. If you prefer, Gorgonzola blue cheese is easier to handle and has a beautiful strong but creamy flavor.  However, any blue cheese will work, it is a matter of preference.

Finally, add a grapefruit square on top of the blue cheese to perfectly compliment the platter.
