Grilled Loin Lamb Chops W/Lemon Thyme Sauce & Braised Fennel

Lamb Loin Chops are easy to grill and give this beautiful meat all the justice it’s due.  To cook, it takes about 6 minutes on each side and the simple marinade ads a luxurious frill!

I was sent this beautiful lamb from Viking Lamb, LLC. The lambs are fed an organic diet of grain feed, pasture grass, and spring water. As an added bonus, they are hormone and antibiotic-free! I will never buy lamb from any other source other than Viking.  The taste is so spectacular, juicy, tender and very affordable.

Here is a simple recipe with lemon thyme sauce accompanied by braised fennel!

Grilled Loin Lamb Chops/ Lemon Thyme Sauce Side of Braised Fennel

To make these delicious grilled loin lamb chops you will need:

  • Loin Lamb Chops (4)
  • 4 to 6 cloves of garlic minced
  • 2 tbsp extra virgin olive oil
  • Rosemary, Sage, and Oregano chopped
  • Salt and pepper for taste
  • Pomegranate seeds for garnish
  • Dried lavender

Step By Step Instructions

Follow these step by step instructions to create the perfect Grilled Loin Lamb Chops!

Step 1: Create Your Marinade

Combine the extra virgin olive oil with minced garlic, chopped rosemary, sage and oregano, and salt and pepper.

Pour this mixture over the lamb loins and be sure to cover both sides before you marinate for a minimum of one hour – or overnight for more flavor.

Step 2: Grill The Lamb Loins To Perfection

Heat your grill to medium-high heat.  Grill on high heat for 2-3 minutes on each side to sear. After 2-3 minutes, lower the heat and cook each side for an additional 4 minutes.

Important: You do not want to overcook this meat.  Make sure the insides are nice and pink.  Let the meat rest on a plate covered with foil for five minutes before serving.

For an awesome presentation, I scatter a few pomegranate seeds on top, as well as some dried lavender.

Lemon Thyme Sauce Ingredients:

To create this delicious lemon thyme sauce, you will need:

  • 1 tbsp extra virgin olive oil
  • 1 cup organic chicken broth
  • 1 fresh-squeezed lemon – juice, and zest
  • 2 sprigs of fresh thyme/chop or peel off leaves
  • 2 tbsp salted Irish cream butter
  • 3 tbsp heavy whipping cream
  • 1 tsp raw brown sugar

Step By Step Instructions

Follow these step by step instructions to create the lemon thyme sauce:

Step 1: Mix Your Ingredients In A Medium Heat

Heat a skillet to medium heat and add broth, lemon juice, and thyme.

Bring to a gentle boil for five minutes. After five minutes, reduce heat and add cream, butter, and brown sugar.

Stir to combine ingredients and remove from the heat.

Step 2: Putting It All Together

Add a spoon full of the lemon thyme sauce alongside each serving of lamb. Place a half a sprig of thyme on top for garnish.

Braised Fennel takes a bit of attention and time, but is so easy you won’t believe it.  The flavor is so rich and delicious and bold enough to stand on its own – yet it will also perfectly complement your lamb loin.

To finish off your delicious main course, create this braised fennel with these ingredients:

  • 2 fennel bulbs cut in quarters
  • ¾ cup of organic chicken broth/ sodium-free
  • 2 tbsp extra virgin olive oil

Step By Step Instructions

These final easy steps will add the perfect complement to your loin lamb chops:

Step 1 (The Only Step!):

Heat the extra virgin olive oil on medium-high heat in an iron skillet for two minutes.

After two minutes, stir in and brown the fennel quarters, until golden brown on all sides. (This may take up to 15 minutes)

The browner they get, the more flavorful they will be.

Reduce heat to medium-low and cover fennel with chicken broth, slowly cook down until broth is fully reduced and fennel is caramelized. That’s it – add it as a delicious side dish!!
